Gel-coat that has gone flat and chalky has not been damaged so much as weathered: the top layer has oxidised and is scattering light instead of reflecting it. Compounding cuts that layer back to sound material underneath, and progressive polishing stages bring the surface up to a mirror. The colour that comes back is the colour the boat left the factory with.
Left untreated, oxidation keeps eating into the gel-coat until there is not enough thickness left to cut, and the only remaining option is a paint job at many times the cost. Polishing on a regular cycle is the cheap way to avoid ever needing that.
